Spicy Apricot Glaze


Spicy Apricot Glaze
Prep Time: 2 minutes Cook Time:15 minutes Yields: 32 ounces
1 lb Apricots, halved and seeds removed
1/2 Cup Water
1/2 Jalapeño, divided, see below
1 Cup Sugar
Juice of 1 Lemon
In a kettle, combine apricots and water. Bring to a boil for 5 minutes.
Mince half of the jalapeno and add to boiling apricots along with the sugar and lemon juice
Boil an additional 5 minutes.
Transfer to a food processor, add remaining jalapeno and process til smooth.
Great for use on salmon, chicken and for grilling vegetables. Simply spoon on meat or vegetables and cook as usual.
