Autumn Skillet Dinner

Prep Time: 2 minutes Cook Time: 6 minutes (plus rice) Serves: 4+
1 Cup Brown Rice
1 lb Ground Pork
2 Apples (I don't know what kind these are, see attached photo and update this item listing please), diced
2 Red Shallots (or 1/2 Red Onion), diced
1 tsp Cinnamon
1 tsp Coriander
Salt and Pepper to taste
Set brown rice to cook - on stovetop or in a rice cooker.
In a skillet, add diced apples with diced onion and season with cinnamon, coriander, salt and pepper. Cook on a high heat until just starting to brown. Add in ground pork and a dash more salt and pepper.
Cook thoroughly.
Add cooked brown rice and stir to incorporate.
Suggested use for leftovers: Stuff any leftovers in a green pepper, add about a teaspoon of water to each pepper, cover with foil and bake on 350* until pepper is softened.
